Creamy Mushroom and Chicken Rice Casserole

2 cups cooked white or brown rice

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (about 2 cups) fresh mushrooms (cremini or white button), sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup frozen peas

1 cup low-sodium chicken broth

1 cup heavy cream or half-and-half

1 cup shredded cheddar cheese (optional, for topping)

½ teaspoon dried thyme

½ teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) so it's ready for baking.

    Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken pieces, and season them with salt and pepper. Cook the chicken for about 6-8 minutes, or until it is browned and cooked through. Once cooked, remove from heat and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion for about 3-4 minutes, or until it becomes translucent. Next, add the minced garlic and sliced mushrooms, cooking for an additional 5-6 minutes until the mushrooms are tender and golden.

        Combine All Ingredients: In a large mixing bowl, combine the cooked rice, sautéed chicken, and the mushroom mixture. Stir in the frozen peas, then pour in the chicken broth and heavy cream.
