Ingredients

1 sheet of puff pastry, thawed

2 cups fresh mushrooms (button or cremini), sliced

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1/2 cup heavy cream

1/2 cup goat cheese, crumbled

1/4 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's hot enough for baking the tarts.

Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry until it reaches approximately 1/4 inch thickness. Using a sharp knife or a pastry cutter, cut the dough into 4 equal squares or circles, based on your preference. Carefully place the pastry on a baking sheet that has been lined with parchment paper to prevent sticking.

Cook the Mushroom Filling: In a large skillet, combine the olive oil and butter, heating over medium heat. Once hot, add in the sliced mushrooms. Sauté them until they're nicely browned and caramelized, which should take about 5-7 minutes. Afterward, add the minced garlic and cook for an additional minute, allowing the garlic to become fragrant.

Incorporate Cream and Cheese: Lower the heat to low, then stir in the heavy cream along with the crumbled goat cheese and grated Parmesan. Sprinkle in the fresh thyme and season the mixture with salt and pepper to taste. Continue cooking on low heat until the cheeses melt and the mixture becomes creamy, approximately 2-3 minutes.

Assemble the Tarts: Using a sharp knife, gently score a border about 1/2 inch from the edge of each pastry square, ensuring you don't cut all the way through. This action will create a raised edge to hold the filling in. Spoon the creamy mushroom mixture into the center of each tart, being careful not to overfill.

Apply Egg Wash: Brush the edges of each puff pastry with the beaten egg. This egg wash will give the tarts a beautiful golden color when they bake.

Bake the Tarts: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pastry is golden brown and flaky.

Garnish and Serve: After baking, remove the tarts from the oven and let them cool for a few moments. Finish by garnishing with freshly chopped parsley. These tarts can be enjoyed warm or at room temperature—perfect for any occasion!
