4 boneless, skinless chicken breasts

2 tablespoons extra virgin olive oil

1 cup mushrooms, sliced (cremini or button variety recommended)

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Chicken: Season both sides of the chicken breasts generously with salt and freshly ground black pepper.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, carefully add the seasoned chicken breasts. Sear them for approximately 5-7 minutes on each side, or until they are a rich golden brown and fully cooked. Once done, remove the chicken from the skillet and set it aside on a plate.

      Cook the Mushrooms: In the same skillet, add the sliced mushrooms. Sauté them for about 3-4 minutes, stirring occasionally, until they turn golden brown and release their moisture.
