Ingredients

1 lb (450g) store-bought gnocchi

1 cup heavy cream

1/2 cup prepared basil pesto (store-bought or homemade)

1 cup sun-dried tomatoes, packed in oil, drained and chopped

2 cloves garlic, minced

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

2 tablespoons extra virgin olive oil

Salt and freshly ground black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Boil the Gnocchi: In a large pot, bring salted water to a rolling boil. Carefully add the gnocchi and cook according to the package instructions, usually until they float to the surface, about 2-3 minutes. Once cooked, gently drain the gnocchi and set them aside.

Sauté Garlic and Sun-Dried Tomatoes: Heat the extra virgin olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until it becomes fragrant—be careful not to allow it to burn, as burnt garlic can impart a bitter flavor.

Incorporate Heavy Cream and Pesto: Lower the heat to a gentle simmer and pour in the heavy cream. Stir in the basil pesto, blending until smooth. Let the mixture simmer for approximately 3-4 minutes, stirring occasionally, allowing it to thicken slightly.

Add Sun-Dried Tomatoes and Spinach: Introduce the chopped sun-dried tomatoes followed by fresh spinach to the skillet. Stir gently and cook for another 1-2 minutes, or until the spinach wilts and brightens in color.

Combine Gnocchi with Sauce: Carefully fold in the cooked gnocchi into the creamy sauce, ensuring each piece is well-coated. Allow them to cook together for an additional 2 minutes so that the gnocchi can absorb some of the creamy goodness.

Finish with Parmesan and Seasoning: Stir in the grated Parmesan cheese, allowing it to melt and incorporate into the dish. Taste and season with salt and freshly ground black pepper as desired.

Serve and Garnish: Serve the creamy gnocchi in warmed bowls or plates, garnished with fresh basil leaves if you wish. Enjoy this comforting dish while it’s hot!
