Ingredients

1 cup pumpkin puree (fresh or canned)

2 cups heavy cream

1 cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

3 cloves garlic, finely minced

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

Salt and freshly ground black pepper to taste

1 pound fettuccine pasta

Fresh parsley or sage leaves, chopped, for garnish (optional)

Instructions

Cook the Pasta: In a spacious pot filled with salted boiling water, cook the fettuccine according to the package instructions until it reaches an al dente texture. Reserve 1 cup of the pasta cooking water, then drain the fettuccine and set it aside.

Prepare the Sauce Base: In a large skillet set over medium heat, melt the unsalted butter. As soon as the butter is melted, add the minced garlic and sauté for approximately 1-2 minutes until it becomes fragrant, taking care not to let it brown as this will alter the flavor.

Incorporate the Pumpkin: Stir the pumpkin puree into the skillet, ensuring it's well combined with the garlic butter. Cook for an additional 2-3 minutes until the mixture is warmed through.

Add the Cream: Gradually introduce the heavy cream to the skillet, stirring continuously to combine the ingredients smoothly. Allow the sauce to simmer gently for about 5 minutes to thicken slightly.

Season the Sauce: Mix in the grated Parmesan cheese, ground nutmeg, ground cinnamon, salt, and freshly ground black pepper. Continue stirring until the cheese has completely melted and the sauce is rich and creamy. If the sauce becomes too thick, gradually incorporate some of the reserved pasta water until you achieve your desired consistency.

Combine the Pasta: Add the drained fettuccine to the skillet with the sauce, tossing the pasta gently to coat it evenly. Allow it to cook together for an additional 1-2 minutes to ensure everything is heated thoroughly.

Serve and Garnish: Plate the luscious pumpkin Alfredo pasta, garnishing with freshly chopped parsley or sage leaves if desired. Serve warm and delight in this creamy, seasonal dish!
