12 oz fettuccine pasta (or pasta of your choice)

2 tablespoons olive oil

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon freshly ground black pepper

1/4 teaspoon freshly grated nutmeg (optional)

2 tablespoons unsalted butter

2 tablespoons chopped fresh parsley (for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the individual cloves. Drizzle the exposed cloves with a little olive oil and wrap the garlic head snugly in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves become golden brown and soft. Once roasted, allow the garlic to cool slightly, then carefully squeeze the garlic from the skins into a bowl, discarding the skins.
