Ingredients
  

1 whole head of garlic

1 (15 oz) can of chickpeas, drained and rinsed

1/4 cup tahini (sesame seed paste)

1/4 cup fresh lemon juice (approximately the juice of 1 large lemon)

2 tablespoons extra-virgin olive oil, plus extra for drizzling

1 teaspoon ground cumin

Salt, to taste

Water, as needed (about 2-4 tablespoons)

Fresh parsley, finely chopped (for garnish)

Paprika, for garnish

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice off the top quarter of the whole garlic head, exposing the individual cloves inside.

        - Drizzle with a small amount of olive oil to coat, then wrap the garlic head in aluminum foil.

          - Place the wrapped garlic in the oven and roast for 30-35 minutes, or until the cloves are soft, tender, and lightly golden.

            Prepare the Hummus Base:

              - In a food processor, add the drained and rinsed chickpeas, tahini, fresh lemon juice, and ground cumin.

                - Carefully squeeze the roasted garlic cloves out of their skins and add them to the food processor along with the other ingredients.

                  Blend Until Smooth:

                    - Pulse the mixture in the food processor until it’s creamy and uniform in texture, stopping to scrape down the sides as needed to ensure even blending.

                      Incorporate Olive Oil and Adjust Consistency:

                        - With the processor running, slowly drizzle in the extra-virgin olive oil.

                          - Gradually add water, one tablespoon at a time, allowing the hummus to blend after each addition, until you achieve your preferred smoothness.

                            Season to Taste:

                              - Taste your hummus and season with salt as desired. Blend briefly to combine the salt evenly.

                                Serve:

                                  - Spoon the creamy hummus into a decorative serving bowl. Drizzle a little extra olive oil on top, and generously sprinkle with freshly chopped parsley and a dash of paprika for added flavor and visual appeal.
