1 large head of garlic

1 can (15 oz) chickpeas, rinsed and drained

3 tablespoons tahini

3 tablespoons olive oil, plus additional for drizzling

2 tablespoons fresh lemon juice (about 1 lemon)

1 teaspoon ground cumin

1/2 teaspoon salt (adjust according to taste)

2-3 tablespoons cold water (more if needed for desired consistency)

Fresh parsley, finely chopped, for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice off the top of the head of garlic, exposing the individual cloves inside. Drizzle with a teaspoon of olive oil, ensuring the cloves are well-coated, and wrap the garlic tightly in aluminum foil. Roast in the oven for 30-35 minutes, or until the cloves feel soft and have turned caramel in color. Once done, allow it to cool slightly, then squeeze the roasted garlic from the skins into a medium-sized mixing bowl.

    Blend the Ingredients: In a food processor, combine the roasted garlic, rinsed chickpeas, tahini, olive oil, fresh lemon juice, ground cumin, and salt. Process the mixture for about 1-2 minutes, or until smooth and creamy. Scrape down the sides of the bowl as needed to ensure everything is well incorporated.

      Adjust the Consistency: With the food processor running, slowly add cold water, one tablespoon at a time, until you reach your desired hummus consistency. The more water you add, the creamier the texture will become. Blend for an additional 30 seconds after adding water to fully incorporate it.
