2 large red bell peppers

2 tablespoons olive oil, divided

On a baking sheet, arrange the whole red bell peppers and drizzle them with 1 tablespoon of olive oil, ensuring they are evenly coated. Roast in the oven for 25-30 minutes, or until the skins are blistered and charred. Once done, remove the peppers from the oven and allow them to cool. Once cool enough to handle, peel off the skin, remove the seeds, and chop the peppers into small, bite-sized pieces.

    Cook the Pasta: While the peppers are roasting, bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, usually around 10-12 minutes. Before draining, reserve 1 cup of the pasta water for later use, then drain and set the pasta aside.

      Sauté the Aromatics: In a large skillet, heat the remaining tablespoon of olive oil over medium heat.
