1 medium spaghetti squash (approximately 3 pounds)

2 tablespoons olive oil

Salt and pepper, to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for layering

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (a mix of oregano, basil, and thyme)

1 large egg

1 cup fresh spinach, chopped

1 cup marinara sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Spaghetti Squash:

    - Preheat your oven to 400°F (200°C).

      - Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds using a spoon. Drizzle the cut sides with olive oil and sprinkle with salt and pepper for flavor.

        - Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-40 minutes, or until the flesh is tender and can easily be shredded into strands with a fork.

          Mix the Cheese Filling:

            - In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, garlic powder, dried Italian herbs, the egg, and chopped spinach. Use a fork or spatula to mix until the ingredients are evenly incorporated and creamy.

              Combine with Spaghetti Squash:
