Ingredients

8 ounces penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

5 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for heat)

1 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente. Drain the cooked pasta and set it aside in a large bowl.

Sauté Chicken: Heat the olive oil in a large skillet over medium-high heat. Season the diced chicken with salt and pepper. Once the oil is hot, add the chicken pieces to the skillet. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set it aside.

Sauté Garlic and Spinach: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute, stirring frequently, to release its fragrance. Add the chopped spinach to the skillet and cook for 2-3 minutes, or until the spinach has wilted down.

Create the Creamy Sauce: Slowly pour in the heavy cream and chicken broth, stirring to combine the ingredients. Sprinkle in the Italian seasoning and, if you’re using them, the red pepper flakes. Bring the mixture to a gentle simmer, allowing it to thicken slightly.

Combine Ingredients: Return the cooked chicken to the skillet. Add the drained penne pasta, tossing everything together to ensure that the pasta is evenly coated with the creamy sauce.

Add Cheese: Sprinkle the grated Parmesan cheese over the pasta mixture. Stir until the cheese has melted and is fully combined into the sauce. Taste and adjust seasoning with more salt or pepper if needed.

Serve: Remove the skillet from heat. Garnish with fresh basil leaves for a pop of color and flavor. Serve immediately while hot and enjoy your delightful creamy spinach and chicken pasta!
