2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cooked ham, diced

4 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)

1 cup heavy cream

1 cup grated Parmesan cheese, plus additional for serving

½ teaspoon crushed red pepper flakes (optional for a kick)

Salt and black pepper, to taste

Fresh basil or parsley, for garnish (optional)

Cook the Pasta: Fill a large pot with water, season with salt, and bring it to a rolling boil. Add the pasta and cook according to the package directions until al dente. Before draining, remember to reserve ½ cup of the cooking water. Once cooked, drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until the onion is translucent and softened. Then, add the minced garlic and continue cooking for another minute, until the garlic is fragrant.
