Creamy Sweet Potato Mac & Cheese

2 large sweet potatoes, peeled and cut into 1-inch cubes

8 oz elbow macaroni (or pasta of your choice)

2 cups sharp cheddar cheese, freshly grated

1 cup mozzarella cheese, freshly grated

1 cup whole milk

1/2 cup cream cheese, softened to room temperature

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter, plus more for greasing the dish

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1/2 cup panko breadcrumbs (optional, for topping)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook the Sweet Potatoes: Fill a large pot with water, adding a generous amount of salt, and bring it to a rolling boil. Carefully add the sweet potato cubes and cook until they are fork-tender, approximately 15-20 minutes. Drain the sweet potatoes thoroughly and set aside.

    Cook the Pasta: Using the same pot, bring fresh water to a boil, then add the elbow macaroni and cook according to the package directions until al dente. Once cooked, drain well and lightly toss the pasta with a drizzle of olive oil to keep it from sticking. Set aside.

      Make the Cheese Sauce: In a high-speed blender or food processor, combine the drained sweet potatoes, whole milk, softened cream cheese, garlic powder, onion powder, smoked paprika, and a pinch each of salt and black pepper. Blend the mixture until it reaches a silky, smooth consistency.

        Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni with the sweet potato cheese sauce. Add the sharp cheddar, mozzarella, and half of the grated Parmesan cheese, stirring thoroughly to ensure every piece of pasta is well-coated in the creamy sauce.

          Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Generously grease a 9x13-inch baking dish with butter, then pour the mac and cheese mixture into the dish, spreading it out evenly.

            Add Topping: If you like a crispy top, sprinkle the remaining Parmesan cheese over the pasta, followed by the panko breadcrumbs. For an added boost of flavor and richness, drizzle melted butter over the breadcrumbs.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden brown, emitting a delicious aroma.

                Serve: Once done, remove the mac and cheese from the oven and allow it to cool for a few minutes. Garnish with freshly chopped parsley for a pop of color and freshness before serving.
