2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 cup cherry tomatoes, halved

1 cup fresh baby spinach

1 cup heavy cream

1/2 cup chicken broth (low-sodium preferred)

1 teaspoon Italian seasoning blend

1/2 cup freshly grated Parmesan cheese

Fresh basil leaves, for garnish

Season the Chicken: Begin by patting the chicken breasts dry using paper towels. This helps achieve a nice sear. Generously season both sides of each breast with salt and pepper to enhance the flavor.

    Sear the Chicken: Heat the olive oil in a large, deep skillet over medium-high heat. Once the oil is shimmering, carefully add the seasoned chicken breasts to the skillet. Cook them for approximately 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Once done, transfer the chicken to a plate and set aside.

      Sauté Garlic and Vegetables: In the same skillet, lower the heat to medium to avoid burning. Add the minced garlic and sauté for about 30 seconds, or until it becomes fragrant. Next, toss in the halved cherry tomatoes and fresh baby spinach. Cook the mixture for about 2-3 minutes, stirring occasionally, until the spinach has wilted and the tomatoes start to soften.

        Make the Creamy Sauce: Pour the heavy cream and chicken broth into the skillet. Whisk in the Italian seasoning and allow the mixture to come to a gentle simmer. Let it simmer for about 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
