Creamy Tzatziki Chicken Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup plain Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh mint, chopped

1 tablespoon lemon juice

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon, for marinating

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Marinate the Chicken: In a medium bowl, combine the chicken cubes with the juice of one lemon, olive oil, salt, and black pepper. Mix everything thoroughly to ensure the chicken is evenly coated in the marinade. Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a bolder flavor.

    Prepare the Tzatziki Sauce: In a separate mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, fresh mint, and a pinch of salt.
