Ingredients

12 oz whole-grain pasta (choose between spaghetti or fettuccine)

1 cup raw cashews, soaked in water for at least 4 hours

1 ½ cups vegetable broth

2 cups fresh spinach (or more, for added greens)

3 cloves garlic, minced

1 small onion, finely diced

2 tablespoons nutritional yeast

1 tablespoon lemon juice

1 teaspoon olive oil

Salt and pepper to taste

Red pepper flakes (optional, for a spicy kick)

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil. Add your choice of whole-grain pasta and cook according to the package instructions until al dente. Once cooked, reserve ½ cup of the pasta water, then drain the pasta and set it aside.

Prepare the Cashew Cream: In a high-powered blender, combine the soaked cashews, vegetable broth, nutritional yeast, lemon juice, and a slight sprinkle of salt and pepper. Blend on high speed until the mixture is smooth and creamy. If the cream is too thick for your taste, gradually add a little more vegetable broth or the reserved pasta water until you reach your desired consistency.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion to the skillet and sauté for about 3-4 minutes, or until the onion is translucent and soft. Next, add the minced garlic and sauté for an additional 1-2 minutes, allowing the garlic to become fragrant but not browned.

Add Spinach: Incorporate the fresh spinach into the skillet, stirring gently until the leaves are wilted and tender, which should take about 2-3 minutes. Season with a touch of salt, pepper, and red pepper flakes if you like a bit of heat.

Combine Pasta and Sauce: Add the drained pasta directly into the skillet with the sautéed spinach and aromatics. Pour the smooth cashew cream sauce over the pasta. Toss everything together thoroughly, using the reserved pasta water as needed to achieve your preferred creaminess.

Serve: Taste your creamy pasta, adjusting seasoning as needed. Spoon into bowls and serve hot, topped with fresh basil leaves for a pop of color and flavor.

              Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4

                - Presentation Tips: For an eye-catching presentation, plate the pasta in shallow bowls and arrange the basil leaves artfully on top. A sprinkle of extra nutritional yeast can add a nice touch of color and texture.
