For the Falafel:

1 cup dried chickpeas (soaked in water overnight)

1 small onion, finely chopped

2-3 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper (adjust according to your spice preference)

1/2 teaspoon baking powder

Salt and black pepper to taste

2-3 tablespoons of flour (any type, to help bind the mixture)

For the Wraps:

4 large whole wheat or regular wraps

1 cup lettuce, shredded

1 medium tomato, diced

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup tahini sauce or yogurt sauce (for drizzling)

Lemon wedges (for serving)

Prepare the Falafel Mixture: Begin by draining and rinsing the soaked chickpeas. In a food processor, combine the chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, cayenne pepper, baking powder, salt, and black pepper. Pulse the mixture until it is finely blended but not completely pureed; you may need to scrape down the sides of the bowl to ensure even mixing. Gradually add the flour, mixing until the falafel mixture can hold its shape when formed into a ball.

    Shape the Falafel: Using your hands, scoop out approximately 1 tablespoon of the mixture and roll it into a ball. Repeat this process with the remaining mixture until you have about 15-18 falafel balls.

      Preheat the Air Fryer: Set your air fryer to preheat at 375°F (190°C) for about 5 minutes.

        Cook the Falafel: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the falafel balls in the basket in a single layer, ensuring not to overcrowd them. Lightly spray the tops of the falafel balls with cooking spray for added crispiness. Air fry them for 12-15 minutes, flipping them halfway through the cooking time, until they are golden brown and crisp on the outside.

          Assemble the Wraps: While the falafel is cooling slightly, prepare your wraps. Lay each wrap flat and generously spread tahini sauce or yogurt sauce on each one. Layer with shredded lettuce, diced tomato, cucumber, and thinly sliced red onion.

            Add the Falafel: Take 3-4 pieces of falafel and place them on each wrap. Drizzle extra sauce on top to enhance the flavor.

              Wrap It Up: To form the wraps, fold in the sides and roll tightly from the bottom upwards. You can secure the wraps with a toothpick if needed.
