Crispy Air-Fryer Fish Tacos

1 lb white fish fillets (such as cod, tilapia, or haddock)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust this to taste)

1/2 tsp salt

1/2 tsp black pepper

8 small corn or flour tortillas

1 cup shredded cabbage (red or green)

1 ripe avocado, sliced

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Optional: Your favorite salsa or hot sauce

Prepare the Fish: Begin by patting the fish fillets dry using paper towels. Next, slice the fillets into strips approximately 1 to 1.5 inches wide. This ensures the pieces fit comfortably in the tortillas.

    Set Up Breading Station: Create a breading station with three shallow bowls. In the first bowl, place the all-purpose flour. In the second bowl, crack the eggs and beat them until blended. In the third bowl, combine the panko breadcrumbs, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper, mixing them well to ensure even seasoning.

      Bread the Fish: Take each fish strip and first dredge it in the flour, carefully shaking off any excess. Next, immerse the floured fish into the beaten eggs, allowing any excess egg to drip off. Finally, coat the fish with the seasoned panko breadcrumbs, pressing gently to ensure they adhere well.

        Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure it's hot before cooking.

          Air Fry the Fish: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the breaded fish strips in a single layer, being careful not to crowd them; you may need to cook in batches. Lightly spray the tops of the fish strips with cooking spray. Air fry them for 10-12 minutes, flipping halfway through the cooking process, until the fish is golden brown and crispy.

            Warm the Tortillas: While the fish is cooking, warm the tortillas. Place them in a skillet over medium heat for about 30 seconds on each side, or until they are warmed and flexible.

              Assemble the Tacos: To assemble, take a few crispy fish strips and place them in the center of each tortilla. Top with a generous amount of shredded cabbage, slice the avocado, and add a few slices on top.
