8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

2 cups whole milk

1/2 cup heavy cream

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

1/2 cup Parmesan cheese, grated

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to preheat at 350°F (175°C). This ensures it’s ready for baking once you’ve prepared the dish.

    Cook the Pasta: In a large pot, fill with water and add a generous amount of salt. Bring this to a rolling boil, then add the elbow macaroni. Cook according to the package directions until al dente, usually around 7-8 minutes. Once done, drain the pasta and set it aside.

      Make the Cheese Sauce: In a large saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour and cook for about 2 minutes, or until it turns a light golden color. Gradually pour in the whole milk and heavy cream, whisking continuously to ensure there are no lumps. Keep stirring as the mixture cooks and thickens, which should take about 5-7 minutes.

        Add the Cheese & Seasonings: Once the sauce has thickened, remove it from the heat. Stir in the shredded sharp cheddar cheese and Gruyère cheese, mixing until they completely melt and form a smooth sauce. Then, incorporate the Dijon mustard, garlic powder, onion powder, smoked paprika, and season generously with salt and pepper to taste.

          Combine Pasta & Cheese Sauce: Gently fold the cooked elbow macaroni into the creamy cheese sauce, making sure every piece of pasta is generously coated.

            Prepare for Baking: Lightly grease a 9x13 inch baking dish with cooking spray or butter. Carefully pour the mac and cheese mixture into the prepared dish, spreading it evenly.

              Make the Topping: In a small bowl, combine the panko breadcrumbs, grated Parmesan cheese, and a drizzle of the melted butter. Stir this mixture well to ensure the crumbs are evenly coated.

                Top & Bake: Evenly sprinkle the breadcrumb mixture over the mac and cheese. Place the dish in the preheated oven and bake for approximately 25-30 minutes, or until the topping is crispy and golden brown.

                  Garnish & Serve: Once baked, carefully remove the dish from the oven. Allow it to cool for a few minutes. Before serving, sprinkle the chopped fresh parsley over the top for a vibrant touch and added flavor.
