8 small corn tortillas

1 cup thinly sliced prosciutto

1 cup salami, cut into thin strips

1 cup aged cheddar cheese, shredded

1 cup Brie cheese, cut into small chunks

½ cup olives (both green and black), pitted and thinly sliced

1 cup fresh baby arugula

½ cup pickled red onions (can be store-bought or homemade)

½ cup hummus (for spreading)

2 tablespoons olive oil, divided

Salt and pepper to taste

Prepare the Tacos:
