2 ¼ teaspoons (1 packet) active dry yeast

1 teaspoon granulated sugar

3 ½ cups all-purpose flour

1 teaspoon fine salt

½ cup olive oil, divided

4 cloves garlic, finely minced

1 tablespoon fresh parsley, finely chopped

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for a kick)

½ cup grated Parmesan cheese

Activate the Yeast: In a medium bowl, combine the warm water, active dry yeast, and sugar. Stir gently to mix. Allow this mixture to sit for 5 to 10 minutes until it becomes frothy—a sign that your yeast is active and ready to use.

    Prepare the Dough: In a large mixing bowl, whisk together the all-purpose flour and fine salt. Create a well in the center of the flour mixture. Pour in the frothy yeast mixture along with ¼ cup of olive oil. Stir until a dough begins to form.

      Knead the Dough: Turn the dough out onto a well-floured surface. Knead the dough for about 5 to 7 minutes until it becomes smooth and elastic. If the dough is sticking to your hands or the counter, sprinkle in a little extra flour, but don’t overdo it.

        First Rise: Transfer the kneaded dough to a greased bowl, turning it so all sides are coated in olive oil. Cover the bowl with a damp cloth and place it in a warm area. Let the dough rise for about 1 hour, or until it has doubled in size.

          Prepare the Garlic Topping: While the dough is rising, combine the minced garlic, chopped parsley, dried oregano, remaining ¼ cup of olive oil, and optional red pepper flakes in a small bowl. Mix well to create a fragrant garlic oil.

            Shape the Breadsticks: Preheat your oven to 425°F (220°C). Once the dough has risen, punch it down gently to release the air.
