Crispy Parmesan Avocado Fries

2 ripe avocados

1 cup breadcrumbs (panko works best for extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

½ tsp onion powder

½ tsp paprika

2 large eggs

1 tbsp water

Salt and freshly ground black pepper to taste

Cooking spray or a drizzle of olive oil for added crispiness

Preheat your oven: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat—this helps prevent the fries from sticking.

    Prepare the avocados: Slice the avocados in half and carefully remove the pit. Use a spoon to scoop out the flesh, then cut each half into wedges or fry-shaped pieces, aiming for thickness of about 1/2 inch.

      Set up the breading station: In a medium bowl, whisk together the eggs and water until well combined. In two separate bowls, mix the breadcrumbs with grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and freshly ground black pepper.

        Bread the avocado wedges: Take each avocado wedge and dip it into the egg mixture, ensuring it's completely coated. Then, transfer it to the breadcrumb mixture, pressing gently to help the coating adhere. Repeat this process with all avocado wedges.
