1/2 cup (50g) finely grated Parmesan cheese

1/2 cup (60g) panko breadcrumbs (for an extra crispy texture)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp freshly ground black pepper

2 large eggs

2 tbsp extra virgin olive oil

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup a breeze, line a large baking sheet with parchment paper.

    Mix the Breading: In a medium mixing bowl, combine the finely grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until all ingredients are well blended.

      Prepare the Carrots: Take the cut carrot fries and place them in a large bowl. In a separate bowl, beat together the two eggs and olive oil until smooth and well mixed. Pour this egg mixture over the carrot fries and toss gently to ensure each fry is evenly coated.
