1 cup broccoli florets

1 cup cauliflower florets

1 cup bell peppers (mixed colors), diced

1 cup zucchini, diced

1 cup cherry tomatoes, halved

3 tablespoons olive oil

1/4 cup store-bought or homemade basil pesto

1/2 cup breadcrumbs (use panko for extra crispiness)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to ensure the veggies don’t stick.

    Prepare the Vegetables: In a large mixing bowl, combine the broccoli florets, cauliflower florets, diced bell peppers, diced zucchini, and halved cherry tomatoes. Toss them lightly to mix.

      Make the Pesto Mixture: In a small bowl, whisk together the olive oil and basil pesto until you achieve a smooth consistency. Drizzle this mixture over the prepared vegetables, tossing everything gently until all the veggies are thoroughly coated.
