Crispy Smashed Baby Potatoes

1.5 pounds baby potatoes (either Yukon gold or red)

3 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Fresh rosemary or thyme, finely chopped (optional for added flavor)

Grated Parmesan cheese (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Boil the Potatoes: Start by thoroughly washing the baby potatoes to remove any dirt. Place them in a large pot filled with salted water. Bring the water to a rolling boil over medium-high heat. Cook the potatoes for about 15-20 minutes, or until they are fork-tender but still hold their shape. Once cooked, drain the potatoes and allow them to cool for a few minutes.

    Preheat the Oven: While the potatoes cool, preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy clean-up after baking.

      Smash the Potatoes: When the potatoes are cool enough to handle, transfer them to the prepared baking sheet. Using the bottom of a glass or a potato masher, gently smash each potato until they are flattened to about ½ inch thick. Ensure they remain intact but beautifully spread out.

        Season the Potatoes: In a small mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
