2 lbs boneless, skinless chicken thighs

4 cups chicken broth (low-sodium recommended)

1 medium onion, finely chopped

2 cloves garlic, minced

3 large carrots, peeled and sliced into rounds

3 stalks celery, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

1 cup frozen peas

1 can (10.5 oz) cream of chicken soup

1 cup buttermilk biscuit dough (store-bought or homemade)

Chopped fresh parsley for garnish (optional)

Instructions
 

Prep the Chicken: Begin by seasoning the chicken thighs generously with salt and pepper. Place them in the bottom of the crockpot, ensuring they are evenly spread out to allow for thorough cooking.

    Add Vegetables: Layer the chopped onion, minced garlic, sliced carrots, and sliced celery on top of the seasoned chicken thighs. This will infuse the chicken with flavor as it cooks.

      Add Liquids & Seasonings: Pour the chicken broth and cream of chicken soup over the layered ingredients, ensuring everything is well-coated. Sprinkle the dried thyme, dried rosemary, and place the bay leaf within the mixture for added depth of flavor.

        Cook: Cover the crockpot with its lid and set it to cook on low for 6-7 hours or on high for 4-5 hours. The chicken should be cooked through and tender once the cooking time is complete.

          Shred Chicken: After cooking, carefully remove the chicken thighs from the crockpot using tongs. Allow them to cool slightly, then shred the chicken into bite-sized pieces using two forks. Return the shredded chicken back into the crockpot, followed by the frozen peas, stirring gently to combine.

            Prepare Dumplings: About 30 minutes before you plan to serve, use a spoon to drop dollops of the biscuit dough over the chicken and vegetable mixture in the crockpot. Space them out to allow for expansion as they cook.

              Finish Cooking: Cover the crockpot once more and cook on high for an additional 30 minutes. This will allow the dumplings to steam effectively, becoming fluffy and cooked through.
