8 oz (225g) pasta (choose penne or fusilli for best results)

1 cup frozen peas

1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream or full-fat coconut milk (for a lighter alternative)

1 cup grated Parmesan cheese, plus extra for serving

2 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Begin by seasoning the boneless chicken breasts with a generous amount of salt, pepper, and half of the Italian seasoning. Arrange the seasoned chicken in a single layer at the bottom of the crockpot.

    Sauté the Aromatics: Heat a drizzle of olive oil in a skillet over medium heat. Add the diced onion and sauté until it turns translucent, approximately 4-5 minutes.
