Ingredients

1 pound of your favorite sausage (choose between mild Italian sausage or spicy chorizo)

3 medium-sized potatoes, diced (Yukon Gold or red potatoes work best)

1 bell pepper, diced (any color for a vibrant touch)

1 large onion, chopped

2 cups of fresh spinach, chopped

2 cloves of garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon freshly ground black pepper

⅓ cup chicken or vegetable broth

2 tablespoons olive oil

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage to the skillet, using a wooden spoon to break it apart. Cook until the sausage is nicely browned, which should take about 5-7 minutes.

Prepare the Vegetables: Once the sausage is cooked through, add the chopped onion, diced bell pepper, and minced garlic to the skillet. Sauté the mixture for an additional 3-4 minutes, stirring occasionally, until the vegetables are slightly softened and fragrant.

Combine in the Crockpot: Transfer the sausage and vegetable mixture into a crockpot. Add in the diced potatoes, chopped spinach, dried thyme, smoked paprika, and black pepper. Pour the chicken or vegetable broth over the mixture evenly.

Seasoning: Season the mix with salt to taste. Stir all the ingredients until they are well combined within the crockpot, ensuring the flavors meld beautifully.

Cook: Cover the crockpot with its lid and set the cooking time. Cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the flavors are well integrated.

Finish and Serve: Once the cooking time is complete, taste the dish and adjust seasoning if needed. Serve the hash hot, garnished with freshly chopped parsley for a burst of color and freshness. This dish is perfect as a hearty main course or as a delightful side!
