Crunchy Air-Fried Breakfast Wrap

4 large whole-wheat tortillas

6 large eggs

1 cup diced bell peppers (mix of red, green, and yellow)

1 cup diced onions

1 cup chopped spinach leaves

1 cup shredded cheese (your choice: cheddar or a cheese blend)

1/2 cup cooked and crumbled turkey sausage or bacon (optional)

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1 tablespoon olive oil

Salt to taste

Cooking spray or olive oil spray for air frying

Salsa or hot sauce for serving (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, crack the eggs and whisk them vigorously. Add garlic powder, black pepper, and a pinch of salt, mixing well. Fold in the diced bell peppers, onions, chopped spinach, and crumbled turkey sausage or bacon (if using) until all ingredients are evenly mixed.

    Cook the Mixture: Heat the olive oil in a large non-stick skillet over medium heat. Carefully pour the prepared egg mixture into the skillet. Cook, stirring gently, for about 5-7 minutes until the eggs are just set and slightly creamy. Once cooked, remove the skillet from heat and set aside.

      Assemble the Wraps: Lay a tortilla flat on a clean countertop. Spoon about 1/4 of the egg mixture into the center of the tortilla, then top with 1/4 cup of the shredded cheese. Fold the left and right edges of the tortilla inward, then roll it up from the bottom to form a neat wrap. Repeat this step with the remaining tortillas and filling.

        Prepare for Air Frying: Preheat your air fryer to 370°F (190°C). Lightly spray the outside of each wrap with cooking spray, which will promote a golden and crispy texture during cooking.

          Air Fry the Wraps: Place 2 wraps at a time in the air fryer basket, ensuring they are spaced apart and not crowded. Air fry for 8-10 minutes, flipping them halfway through for even crisping, until the wraps are golden brown and crispy on all sides. Repeat with any remaining wraps.

            Serve: Once cooked, carefully remove the wraps from the air fryer and allow them to cool for a minute. For presentation, cut each wrap in half diagonally. Serve warm alongside salsa or hot sauce for dipping, if desired.
