2 medium eggplants

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray (or cooking spray)

Fresh parsley, finely chopped (for garnish)

Prepare the Eggplants: Begin by slicing the eggplants into rounds about 1/4-inch thick. To reduce bitterness and moisture, lightly sprinkle the slices with salt and let them rest in a colander for about 30 minutes. After resting, rinse the slices under cold water to remove the salt, then pat them dry thoroughly with paper towels.

    Set Up Breading Station: Create an efficient breading station using three shallow dishes:

      - In the first dish, add the all-purpose flour for dredging.

        - In the second dish, crack the eggs and beat them together with 1 tablespoon of water (this helps the coating adhere better).

          - In the third dish, combine the panko breadcrumbs with garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to ensure an even distribution of spices.

            Bread the Eggplant Slices: Take one eggplant slice and coat it in the flour, shaking off any excess. Dip the floured slice into the beaten eggs, allowing any surplus egg to drip back into the dish. Finally, press the slice into the seasoned panko mixture, ensuring a thorough coating.
