1 medium zucchini, cut into stick shapes

1 medium carrot, cut into stick shapes

1 medium bell pepper (any color), cut into stick shapes

1 small sweet potato, cut into sticks

1/2 cup all-purpose flour (or gluten-free flour for a gluten-free option)

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Prepare the Vegetables: Begin by thoroughly washing the zucchini, carrot, bell pepper, and sweet potato. Slice these vegetables into uniform stick shapes, aiming for similar sizes to ensure they cook evenly.

    Establish the Breading Station: Set up an organized breading station with three bowls:

      - In the first bowl, combine the flour with garlic powder, onion powder, smoked paprika, salt, and black pepper.

        - In the second bowl, crack the eggs and whisk them together until the yolks and whites are fully blended.

          - In the third bowl, pour in the panko breadcrumbs, ready for coating the veggies.

            Coat the Veggie Sticks: Take one vegetable stick at a time and follow these steps:

              - Dip the stick into the flour mixture, making sure it’s fully coated. Gently shake off any excess flour.

                - Next, immerse it in the egg mixture, allowing any surplus egg to drip back into the bowl.

                  - Finally, roll the coated stick in the panko breadcrumbs, pressing lightly to help the crumbs adhere well. Place each coated stick onto a plate or baking sheet and repeat this process for all the vegetable sticks.
