1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust according to desired spice level)

Salt and pepper to taste

1/2 cup BBQ sauce (preferably your favorite variety)

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 ripe avocado, sliced

1 small red onion, thinly sliced

1/2 cup cherry tomatoes, halved

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for the chickpeas.

    Season the Chickpeas: In a medium-sized mixing bowl, add the rinsed and drained chickpeas. Pour in the olive oil, then sprinkle the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper over the chickpeas. Toss everything together until each chickpea is evenly coated in the seasoning mixture.

      Bake the Chickpeas: Transfer the seasoned chickpeas onto a baking sheet, spreading them out into a single layer. Bake in the preheated oven for approximately 25-30 minutes, shaking the pan halfway through the cooking time. The chickpeas should be crispy and golden brown when done.

        Add BBQ Sauce: Once baked, remove the chickpeas from the oven and let them cool for a few minutes. After they’ve cooled slightly, drizzle your favorite BBQ sauce over the chickpeas and gently toss until they are well-coated.

          Prepare the Tortillas: While the chickpeas are cooling, warm the tortillas to make them more pliable. You can do this by placing them in a dry skillet over low heat for a few seconds per side, or by microwaving them for about 10-15 seconds.
