Ingredients

4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, shredded or julienned

1/2 cup red bell pepper, thinly sliced

1/2 cup green onions, chopped (include both white and green parts)

3/4 cup roasted peanuts, coarsely chopped

1/4 cup fresh cilantro, roughly chopped

For the Dressing:

1/4 cup peanut butter (choose smooth or crunchy based on preference)

2 tablespoons soy sauce or tamari (ensure gluten-free with tamari)

2 tablespoons rice vinegar

1 tablespoon honey or agave syrup (use agave for a vegan option)

1 tablespoon sesame oil

1 teaspoon freshly grated ginger

1 clove garlic, minced

Salt and freshly ground black pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, shredded carrots, thinly sliced red bell pepper, and chopped green onions. Gently toss the vegetables together until well incorporated.

Make the Dressing: In a separate bowl, whisk together the peanut butter, soy sauce (or tamari), rice vinegar, honey (or agave), sesame oil, grated ginger, and minced garlic. Continue whisking until the mixture is smooth and well-combined. If the dressing seems too thick, add a small splash of warm water to reach your desired consistency.

Combine: Pour the creamy dressing over the cabbage mixture. Using tongs or a large spoon, toss everything together thoroughly to ensure each piece of vegetable is evenly coated in the dressing.

Add the Crunch: Carefully fold in the coarsely chopped peanuts and the roughly chopped cilantro. If you like, save a few chopped peanuts for garnishing later.

Chill: For optimal flavor, refrigerate the slaw for about 30 minutes. This allows the flavors to meld beautifully.

Serve: Before serving, give the slaw another gentle toss. Garnish with the reserved peanuts and additional cilantro if desired.

Enjoy this crunchy, vibrant, and flavorful slaw as a delightful side dish or a light main course!
