Ingredients

4 cups green cabbage, finely shredded

1 cup carrots, julienned

1 bell pepper (red or yellow), thinly sliced

1 cup snap peas or snow peas, trimmed

1/2 cup red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce or tamari (for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon rice vinegar

1 teaspoon chili flakes (adjust based on preferred spice level)

1/4 cup roasted peanuts or cashews, roughly chopped

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Vegetables: Start by thoroughly washing all the vegetables. Finely shred the green cabbage and julienne the carrots. Slice the bell pepper and red onion thinly. Trim the ends off the snap peas or snow peas, and set all the prepared vegetables aside in separate bowls.

Heat the Oils: In a large skillet or wok, heat the olive oil and sesame oil over medium-high heat. Wait until the oils shimmer, indicating they are sufficiently hot.

Sauté the Aromatics: Once hot, add the minced garlic and grated ginger to the skillet. Stir continuously for about 30 seconds until the mixture becomes fragrant and aromatic, but be careful not to burn it.

Add the Vegetables: Immediately toss in the green cabbage, carrots, sliced bell pepper, red onion, and snap peas. Stir-fry the medley for 5-7 minutes, stirring frequently until they are tender-crisp and vibrant in color.

Season the Stir-Fry: Drizzle the soy sauce and rice vinegar over the sautéed vegetables, then sprinkle the chili flakes to your desired level of heat. Stir well to combine all the flavors and continue to cook for an additional 2-3 minutes, allowing the sauce to coat the vegetables.

Serve: Remove the stir-fry from heat and carefully transfer it to serving bowls. Generously sprinkle with the chopped roasted peanuts or cashews and fresh cilantro for added texture and flavor.

Add Lime: Serve the bowls with lime wedges on the side. Just before enjoying your meal, squeeze fresh lime juice over the stir-fry for a zesty and refreshing kick.

Presentation Tips: For an attractive presentation, consider layering the vegetables in the bowls, starting with the cabbage at the bottom and arranging the other vegetables on top. Garnish with extra cilantro leaves and serve on a vibrant plate for a pop of color!
