Ingredients

8 oz soba noodles

1 cup shredded green cabbage

1 cup shredded red cabbage

1 cup shredded carrots

1 cup snap peas, halved

1 red bell pepper, thinly sliced

4 green onions, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup roasted peanuts, roughly chopped

2 tbsp sesame seeds (a mix of white and black for visual appeal)

Sesame Dressing:

1/4 cup sesame oil

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp rice vinegar

1 tbsp honey or maple syrup (for a vegan alternative)

1 tsp freshly grated ginger

1 garlic clove, minced

Juice of 1 lime

Instructions

Prepare the Noodles:

    - Bring a large pot of water seasoned with salt to a rolling boil. Add the soba noodles and cook for 4-5 minutes, or until they reach an al dente texture. Once cooked, drain the noodles and rinse them immediately under cold water to halt the cooking process. Set aside to cool completely.

      Make the Dressing:

        - In a small mixing bowl, add sesame oil, soy sauce (or tamari), rice vinegar, honey or maple syrup, grated ginger, minced garlic, and the fresh lime juice. Whisk all the ingredients together until smooth and well combined. Taste the dressing and adjust the seasoning if desired.

          Combine the Vegetables:

            - In a large mixing bowl, add the shredded green cabbage, red cabbage, carrots, snap peas, red bell pepper, sliced green onions, and chopped cilantro. Toss the vegetables together until they are evenly mixed.

              Add the Noodles:

                - Once the soba noodles have cooled, transfer them to the large bowl with the mixed vegetables. Drizzle the sesame dressing over the top. Gently toss the mixture, ensuring that all ingredients—noodles and vegetables—are evenly coated with dressing.

                  Finishing Touches:

                    - Sprinkle the roughly chopped roasted peanuts and the sesame seeds over the slaw. Give the mixture a light toss again to distribute the peanuts and seeds without breaking the noodles.

                      Chill and Serve:

                        - For optimal flavor, cover the noodle slaw and let it chill in the refrigerator for at least 20-30 minutes before serving. This resting time allows the flavors to meld beautifully. Serve the slaw chilled or at room temperature for a refreshing and vibrant dish.
