Ingredients

2 large cucumbers

1 ripe avocado

1 can (5 oz) tuna in water or olive oil, drained

2 tablespoons Greek yogurt (or mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup red onion, finely diced

1/4 cup celery, finely diced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

Salt and pepper to taste

Optional toppings: halved cherry tomatoes, red pepper flakes, and extra dill for garnish

Instructions

Prepare the Cucumbers: Begin by thoroughly washing the cucumbers under cold running water. Slice each cucumber in half lengthwise and use a small spoon to scoop out the seeds, creating a boat-like shape. Arrange the cucumber halves on a serving platter, cut-side up, to prepare for filling.

Make the Tuna Salad: In a medium-sized mixing bowl, mash the ripe avocado with a fork until it reaches a smooth consistency. Then, add in the drained tuna, Greek yogurt, Dijon mustard, and fresh lemon juice. Carefully stir the mixture until all ingredients are well blended.

Enhance the Flavor: Gently fold in the finely diced red onion, celery, and freshly chopped dill into the tuna salad mixture. Season with salt and pepper to taste, ensuring everything is evenly mixed for optimal flavor.

Fill the Boats: Using a spoon, generously scoop the tuna salad mixture into each cucumber half, making sure to fill them to the top for a delightful presentation.

Garnish and Serve: For added flavor and visual appeal, top each filled cucumber boat with halved cherry tomatoes or a light sprinkle of red pepper flakes for a subtle kick. Finish with a sprinkle of extra fresh dill on top for garnish.

Chill (Optional): For a refreshing twist, consider chilling the filled cucumber boats in the refrigerator for about 15 to 20 minutes prior to serving. This allows the flavors to meld and creates a crisp bite.
