1 small red bell pepper, diced

1 small red onion, diced

2 cups vegetable broth or coconut water

2 tablespoons fresh lime juice (approximately 1 lime)

1 tablespoon extra-virgin olive oil

1 tablespoon honey or agave syrup (optional; adjust according to sweetness preference)

1 teaspoon ground cumin

Salt and freshly cracked black pepper to taste
