Ingredients

1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) enchilada sauce (choose either red or green based on preference)

1 cup corn kernels (can be fresh, frozen, or canned)

1 tsp chili powder

1 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

8 corn tortillas

2 cups shredded cheddar cheese (or a blend of your favorite Mexican cheeses)

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it's hot and ready for your casserole.

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until it is browned and fully cooked through, breaking it apart with a spatula as it cooks. Once browned, drain any excess fat from the skillet.

Season the Filling: Add the drained black beans, corn kernels, and enchilada sauce to the skillet with the cooked beef. Season the mixture with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir everything together thoroughly and let it simmer for about 5 minutes. This allows the flavors to blend beautifully.

Prepare the Tortillas: While the filling is simmering, take a dry skillet and heat it over medium heat. Lightly warm the corn tortillas for about 30 seconds on each side until they become soft and pliable. As an alternative, you can stack the tortillas and microwave them for 20-30 seconds wrapped in a damp paper towel.

Assemble the Casserole: In a 9x13 inch baking dish, spread a thin layer of the beef and bean mixture on the bottom. Evenly layer 4 of the tortillas on top. Add half of the remaining beef and bean filling over the tortillas, then sprinkle a generous amount of cheese on top. Repeat this process, adding the last 4 tortillas and the remainder of the beef and bean mixture. Finish with a final layer of cheese on top.

Bake the Casserole: Cover the baking dish tightly with aluminum foil. Place it in the preheated oven and bake for 20 minutes. After that time, remove the foil and allow the casserole to bake for an additional 10-15 minutes, or until the cheese is wonderfully melted and bubbly.

Serve: Once baked to perfection, remove the casserole from the oven and let it rest for about 5 minutes. This will help it set slightly. Garnish the dish with freshly chopped cilantro and sliced jalapeños if you like a bit of heat. Serve hot with a side of sour cream for drizzling.

Prep Time, Total Time, Servings: 15 min | 50 min | Serves 6-8.

Presentation Tips: Consider serving the casserole family-style in the baking dish or divide into individual portions, each topped with a dollop of sour cream and a sprinkle of cilantro for color. Enjoy this hearty and satisfying dish!
