1 cup fresh broccoli florets (finely chopped)

1 cup shredded sharp cheddar cheese

1/2 cup milk

1 small onion (finely chopped)

1 clove garlic (minced)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil or butter

Optional garnish: fresh chives or parsley (chopped)

Prep the Broccoli: If using fresh broccoli, steam or blanch the florets for 2-3 minutes until they are bright green and tender. Drain the broccoli well and set aside. If using frozen broccoli, ensure it is thoroughly thawed and then chop finely.

    Sauté the Aromatics: In a large skillet, heat the olive oil or butter over medium heat. Once hot, add the chopped onion and cook for about 3-4 minutes until it becomes translucent. Next, add the minced garlic and sauté for an additional minute, stirring constantly until fragrant.

      Combine the Egg Mixture: In a large mixing bowl, whisk the eggs together with milk, salt, and black pepper until fully blended. Stir in the sautéed onion and garlic, followed by the finely chopped broccoli and half of the shredded cheddar cheese. Mix everything together until evenly distributed.

        Cook the Omelette: Clean out the skillet using a paper towel if necessary, then return it to medium heat. Pour the egg and vegetable mixture into the skillet, using a spatula to spread it evenly. Allow the omelette to cook undisturbed for about 5-7 minutes or until the edges start to set and lightly firm up.

          Add Cheese and Finish Cooking: Once the edges have set, sprinkle the remaining cheddar cheese evenly over the top of the omelette.
