1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 bell pepper (your choice of color), sliced into thin strips

1 medium onion, sliced

Juice of 1 fresh lime

For the Cilantro Lime Rice:

1 cup long-grain white rice (or jasmine rice)

2 cups water or chicken broth

1/4 cup fresh cilantro, finely chopped

Juice of 1 lime

1 tablespoon butter or olive oil

Pinch of salt

Toppings:

Creamy sliced avocado or fresh guacamole

Sour cream or Greek yogurt

Shredded cheese (cheddar or Monterey Jack)

Sliced jalapeños (if desired)

Extra fresh cilantro for garnishing

Lime wedges for serving

Instructions

Prepare the Rice:

    - In a medium saucepan, combine the long-grain rice with water (or chicken broth). Add a pinch of salt and bring to a rolling boil over high heat.

      - Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for about 15-18 minutes, or until all the liquid is absorbed and the rice is tender.

        - After cooking, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the butter (or olive oil), fresh lime juice, and chopped cilantro. Set aside.

          Cook the Chicken:

            - While the rice cooks, heat the olive oil in a large skillet over medium-high heat.

              - Once hot, add the chicken strips to the skillet. Sprinkle the chicken with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Toss the chicken to ensure it is well-coated in the spices.

                - Sauté the chicken for about 5-7 minutes, stirring occasionally, until it is cooked through and no longer pink in the center.

                  Add the Vegetables:

                    - To the skillet with the cooked chicken, add the sliced bell pepper and onion. Squeeze the fresh lime juice over the top.

                      - Stir everything together and cook for an additional 4-5 minutes, until the vegetables are tender but still slightly crisp.

                        Assemble the Bowls:

                          - In individual serving bowls, start by spooning in a generous scoop of the cilantro lime rice as your base.

                            - Next, add a portion of the chicken fajita mixture on top of the rice.

                              - Enhance each bowl with your favorite toppings: creamy slices of avocado, a dollop of sour cream, shredded cheese, spicy jalapeños, and a sprinkle of extra cilantro.

                                Serve and Enjoy:

                                  - Present the bowls with lime wedges on the side for an added zesty flavor. Dig in and enjoy your Flavorful Fiesta Chicken Fajita Bowls!
