1 lb boneless, skinless chicken breasts, cut into thin strips

1 tablespoon olive oil

1 large onion, thinly sliced

1 bell pepper (any color), thinly sliced

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 cups cooked brown rice (or substitute with white rice)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (can be fresh, frozen, or canned)

1 cup diced tomatoes (canned, drained if necessary)

1 ripe avocado, diced

½ cup shredded cheese (cheddar or Mexican blend preferred)

Fresh cilantro leaves, for garnishing

Lime wedges, for serving

Instructions
 

Cook the Chicken: Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the sliced chicken strips. Sprinkle with chili powder, ground cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, for about 6-8 minutes or until the chicken is fully cooked and no longer pink in the center.

    Sauté Vegetables: To the skillet with the cooked chicken, add the thinly sliced onion and bell pepper. Sauté for an additional 5 minutes, or until the vegetables are softened. Add the minced garlic and cook for another minute, stirring constantly until the garlic becomes fragrant.
