Ingredients

1 cup rolled oats

1 cup almond milk (or any milk of your choice)

1 ripe peach, diced (reserve a few slices for garnish)

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 tablespoon honey or maple syrup (adjust to your sweetness preference)

1/4 cup Greek yogurt (optional, for a creamy texture)

2 tablespoons chopped walnuts or pecans (for added crunch)

A small pinch of salt

Instructions

In a large mixing bowl, combine the rolled oats and almond milk. Stir until the oats are thoroughly soaked.

Add the diced peach, vanilla extract, ground cinnamon, honey or maple syrup, Greek yogurt (if using), and a pinch of salt to the bowl. Mix well until all ingredients are evenly distributed.

Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired.

Carefully spoon the oat mixture into two jars or containers with tight-fitting lids, making sure to leave some space at the top for potential expansion.

Seal the jars or containers and place them in the refrigerator overnight or for a minimum of 4 hours, allowing the oats to absorb the liquid and soften.

When ready to serve the next morning, take the jars out of the refrigerator and give the oats a good stir to recombine. Top with additional peach slices and a sprinkle of chopped walnuts or pecans for that delightful crunch.

Enjoy your refreshing Easy Peach Pie Overnight Oats either chilled straight from the fridge or at room temperature!
