2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1 can (10 oz) enchilada sauce

8 small flour or corn tortillas

Salt and pepper, to taste

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures it's hot and ready for your enchiladas once they're assembled.

    Sauté the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely diced onion and sauté until it becomes translucent, which should take about 3-4 minutes.

      Add Garlic and Turkey: Stir in the minced garlic, allowing it to cook for about 30 seconds until fragrant. Then, add the ground turkey to the skillet. Cook it until browned and fully cooked through, breaking it apart with a spatula, which typically takes about 5-7 minutes.

        Mix in Other Ingredients: Once the turkey is cooked, incorporate the rinsed black beans, corn, ground cumin, smoked paprika, chili powder, and a pinch of salt and pepper. Stir everything together, heating through for about 3 minutes until all ingredients are well-combined.
