Ingredients

1 pound ground turkey

2 cups broccoli florets, washed and trimmed

1 cup bell peppers, sliced into thin strips (use a mix of red, yellow, and green for color)

1 cup sugar snap peas, ends trimmed

1 medium carrot, peeled and julienned

3 cloves garlic, finely minced

1 tablespoon fresh ginger, peeled and grated

3 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce (substitute with hoisin sauce for a vegetarian alternative)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper, to taste

Cooked rice or quinoa, for serving

Sesame seeds and sliced green onions, for garnish

Instructions

Prepare Ingredients: Wash and chop all vegetables. Place the broccoli florets, sliced bell peppers, sugar snap peas, and julienned carrot into a large mixing bowl for easy access.

Cook Turkey: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the ground turkey. Cook for about 5-7 minutes, stirring frequently, until the turkey is browned and fully cooked through. Remember to break it up into smaller pieces with a spatula as it cooks.

Add Aromatics: When the turkey is fully cooked, add the minced garlic and grated ginger to the skillet. Stir well to combine and sauté for an additional 1-2 minutes until the aromatics are fragrant and golden.

Stir-Fry Vegetables: Add the mixed vegetables from the bowl to the skillet with the turkey. Stir-fry everything together for 3-4 minutes, allowing the vegetables to become tender while still retaining their crispness.

Sauce It Up: In a small bowl, whisk together the low-sodium soy sauce, oyster sauce, and sesame oil until blended. Pour this mixture over the turkey and veggies, tossing everything together to ensure an even coating.

Thicken the Sauce: Introduce the cornstarch mixture to the pan, stirring continuously for about a minute until the sauce thickens slightly. Taste the stir-fry and season with salt and pepper as needed.

Serve: Remove the skillet from heat and serve the stir-fry hot over a bed of cooked rice or quinoa. To enhance the dish visually and add a crunch, garnish with a sprinkle of sesame seeds and sliced green onions.

Prep Time: 15 minutes | Total Time: 25 minutes | Servings: 4 servings.

Enjoy your delicious and nutritious Turkey Veggie Delight Stir-Fry!
