1 cup fresh spinach, chopped

1/2 bell pepper, diced (any color)

1/2 small red onion, diced

1/2 cup cherry tomatoes, halved

1/4 cup shredded cheese (cheddar, feta, or your choice)

4 whole grain or flour tortillas

1 tablespoon olive oil

Salt and pepper, to taste

Prepare the Vegetables: In a large skillet, heat olive oil over medium heat. Once hot, add the diced red onion and bell pepper. Sauté for about 3-4 minutes, until the vegetables are tender. Then, incorporate chopped spinach and halved cherry tomatoes, stirring continuously until the spinach softens and wilts, roughly 2 minutes. Season the mixture with salt and pepper to taste, then remove the skillet from the heat.

    Whisk the Eggs: In a medium mixing bowl, crack the eggs and pour in the milk. Whisk together until thoroughly combined and smooth. Add a pinch of salt and pepper to enhance the flavors.

      Scramble the Eggs: Return the skillet to the heat. If there are any remnants from the veggies, feel free to wipe them out to prevent burning.
