4 boneless, skinless chicken breasts

2 tablespoons olive oil

8 ounces cremini mushrooms, sliced

1 medium onion, diced

4 cloves garlic, minced

1 cup low-sodium chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

2 teaspoons thyme (fresh or dried)

1 teaspoon rosemary (fresh or dried)

Salt and pepper to taste

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Prepare the Chicken: Start by patting the chicken breasts dry with paper towels. Season both sides generously with salt and pepper to enhance flavor.

    Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet. Cook them for about 6-7 minutes per side, ensuring they develop a beautiful golden brown crust and reach an internal temperature of 165°F (75°C). Once cooked, transfer the chicken to a plate and keep it warm.

      Sauté the Vegetables: In the same skillet, without wiping it clean, add the diced onion and sliced mushrooms. Sauté for approximately 5-6 minutes or until the mushrooms become tender and the onions turn translucent. Stir in the minced garlic and cook for an additional 1-2 minutes, allowing the garlic to become fragrant.

        Make the Sauce: Carefully pour in the chicken broth, using a wooden spoon to scrape up any tasty browned bits from the bottom of the skillet. Then, stir in the heavy cream, Dijon mustard, thyme, rosemary, and additional salt and pepper to your liking. Let the mixture come to a gentle simmer.

          Combine: Return the chicken to the skillet, nestling it into the sauce. Lower the heat to low and let it simmer for about 5 minutes, allowing the sauce to thicken slightly and the flavors to meld.

            Add Spinach and Cheese: Stir in the chopped spinach and sprinkle the grated Parmesan cheese over the top. Cook for an additional 2-3 minutes until the spinach is wilted and the cheese has melted into the creamy sauce.

              Garnish and Serve: Remove the skillet from heat. If desired, garnish with freshly chopped parsley for a pop of color. Serve the dish hot alongside crusty bread, fluffy rice, or a crisp green salad for a complete meal.
