Ingredients

4 cups fresh watermelon, cut into 1-inch cubes

1 cup feta cheese, crumbled

1/4 cup fresh mint leaves, finely chopped

1 tablespoon extra virgin olive oil

1 tablespoon balsamic glaze

Freshly cracked black pepper, to taste

Pinch of sea salt (optional)

Wooden toothpicks or appetizer skewers

Instructions

Prepare the Ingredients: Begin by cutting the watermelon into 1-inch cubes. Place the watermelon cubes in a bowl. Next, crumble the feta cheese and transfer it to another bowl. Take the fresh mint leaves, chop them finely, and set them aside for later use.

Assemble the Bites: Grab your wooden toothpicks or skewers. On each stick, carefully thread one watermelon cube onto the skewer. Follow this with a generous sprinkle of crumbled feta cheese on top of the watermelon. Finish by adding another watermelon cube on top. Repeat this process until all the ingredients have been utilized.

Drizzle & Season: Once the bites are assembled, arrange them neatly on a serving platter. Drizzle the extra virgin olive oil and balsamic glaze evenly across the bites to enhance the flavors. Next, sprinkle the finely chopped mint over the top, then add freshly cracked black pepper to taste. If you like, finish with a light pinch of sea salt for an extra touch.

Chill & Serve: For optimal flavor, place the platter in the refrigerator for about 15 minutes. This chilling time allows the ingredients to meld and the flavors to intensify. Serve cold as a refreshing appetizer or a delightful snack!
