Ingredients

1 lb fresh strawberries

8 oz cream cheese, softened to room temperature

1/2 cup powdered sugar

1 tsp pure vanilla extract

1/2 cup heavy cream

1/4 cup crushed graham crackers

Optional: melted chocolate for drizzling

Instructions

Prep Strawberries: Rinse the strawberries under cool water and gently pat them dry with a clean towel. Remove the leafy green tops and, using a small paring knife or a teaspoon, carefully hollow out a small cavity in the center of each strawberry. Place the prepared strawberries aside on a clean plate.

Make Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using a hand mixer or whisk, blend the ingredients until the mixture is smoothly combined and creamy, with no lumps remaining.

Whip the Cream: In a separate mixing bowl, pour in the heavy cream. Using an electric mixer, whip the cream on medium-high speed until stiff peaks form. This should take about 3-5 minutes. Once whipped, gently fold the whipped cream into the cream cheese mixture. Continue to fold until the filling is fluffy and well combined, being careful not to deflate the whipped cream.

Stuff the Strawberries: Take a piping bag fitted with a large round tip or simply use a spoon to fill each hollowed strawberry with the cheesecake filling. Make sure each strawberry is generously filled, leaving a bit of the filling visible on top.

Prepare for Freezing: After filling, sprinkle a light dusting of crushed graham crackers on top of each stuffed strawberry. This adds a delightful texture and enhances the classic cheesecake flavor.

Freeze: Line a baking tray with parchment paper and place the stuffed strawberries on it in a single layer. Transfer the tray to the freezer and allow the strawberries to freeze for at least 2-3 hours, or until they are completely frozen.

Optional Drizzle: If you wish to add a touch of elegance, melt some chocolate in a microwave-safe bowl or using a double boiler. Once melted, drizzle the chocolate over the frozen strawberries just before serving for an extra layer of indulgence.

Enjoy: Serve the frozen cheesecake stuffed strawberries directly from the freezer for an exceptionally cool and refreshing dessert that bursts with flavor!
