Frozen Cherry Vanilla Oat Clusters

2 cups rolled oats

1 cup frozen cherries, chopped into small pieces

½ cup almond butter (or your choice of nut butter)

¼ cup honey or pure maple syrup

1 teaspoon pure vanilla extract

¼ teaspoon fine sea salt

½ teaspoon ground cinnamon

¼ cup mini dark chocolate chips (optional for a sweet treat)

¼ cup sliced almonds or chopped walnuts (optional for added crunch)

Instructions
 

Prepare the Mixture: In a spacious mixing bowl, thoroughly mix together the rolled oats, chopped frozen cherries, almond butter, honey or maple syrup, vanilla extract, sea salt, and ground cinnamon. Stir well until all ingredients are evenly combined and the oats are fully coated in the almond butter and sweetener.

    Add Extras: If you’re opting for the sweetness of mini dark chocolate chips and/or the crunch of nuts, gently fold them into the mixture now. Make sure they are evenly distributed throughout the mixture.

      Shape Clusters: Using either your hands or a cookie scoop, form small clusters of the mixture, about 2 tablespoons in size. Place each cluster on a baking sheet lined with parchment paper. Press each cluster down gently to help them hold their shape during freezing.

        Freeze: Transfer the baking sheet to the freezer and allow the clusters to freeze for about 1 hour, or until they are firm to the touch.

          Storage: Once frozen, carefully transfer the clusters into an airtight container. If desired, layer them with parchment paper to prevent sticking. These clusters can be stored in the freezer for up to two months for optimal freshness.
