1 cup coconut cream (chilled overnight in the fridge)

1/2 cup mixed berries (raspberries, blueberries, and strawberries)

2 tablespoons honey or agave syrup (adjust to taste)

1 tablespoon fresh lime juice

1 teaspoon grated lime zest

For the topping:

1/4 cup unsweetened shredded coconut

Additional berries for garnish (optional)

Instructions
 

Prepare the Base:

    - In a mixing bowl, combine almond flour, shredded coconut, maple syrup, melted coconut oil, salt, and vanilla extract. Stir the mixture until it is well combined and forms a cohesive dough.

      - Firmly press the mixture into the bottom of an 8x8-inch square baking dish, ensuring it is evenly distributed. You can use a spatula or your hands to create a compact and even layer. Set the dish aside.

        Make the Filling:

          - In a large mixing bowl, scoop the chilled coconut cream from the fridge (discard the liquid). Using a hand mixer or whisk, beat the coconut cream until it becomes light, fluffy, and smooth.

            - Carefully fold in the mixed berries, honey or agave syrup, fresh lime juice, and lime zest. Stir gently to combine, being mindful not to mash the berries too much; you want some to remain whole for added texture.

              Assemble the Squares:

                  - Lightly sprinkle the unsweetened shredded coconut topping evenly over the berry filling.

                    Freeze:

                        Serve:
